Avocado & Banana Carob Pudding

Ingredients

1½ bananas

1 avocado

1/4 cup carob powder

3 Tbsp maple syrup

1/2 tsp vanilla extract

1/4 tsp ground cinnamon

1 additional banana

1/4 cup chopped almonds

Directions

Add 1 1/2 bananas, avocado and carob powder to a food processor and process about 1 minute.

With processor running, pour maple syrup through feed tube and process until completely smooth, scraping down bowl as needed, about 1 minute.

Add vanilla and cinnamon and process about 10 seconds.

Transfer to an airtight container and refrigerate for 90 minutes, until well chilled.

When ready to serve, divide pudding between 4 small bowls or pre-made pie crust.

Decorate with remaining banana, a dollop of cream and a sprinkle of chopped almonds.
