Chickpea pizza

Ingredients

3 c chickpea or garbanzo flour

3 c water

1 tsp onion powder

½ tsp garlic powder

2 Tbsp oil for dough

1 tsp salt

Oil for brushing the tray

2 medium onions, thinly sliced

1 tsp oil for frying

2 c pizza or pasta sauce or tomato sauce

4 c baby spinach, chopped small

½ red bell pepper sliced thinly

1 c hummus

12 black olives, pitted

Directions:

In a mixing bowl, combine flour and 1 cup of water. Mix well, and then slowly add rest of the water while mixing. Add onion powder, garlic powder, oil and salt and mix well.

Grease a 12 x 16 inch oven tray with oil and pour batter into the tray, spreading evenly. Don’t worry if the batter is lumpy. Bake at 350oF or 180oC for 15 minutes.

In a small frying pan sauté the onion in oil until soft and brown.

After chickpea base is baked, cover with tomato sauce that has been warmed through. Next layer caramelized onion, then spinach and finally bell pepper.

Top each slice with a dollop of hummus and an olive.

Serve immediately. Makes 12 slices.
