Quinoa Citrus Salad

Ingredients

4 C cooked quinoa

5 assorted citrus fruits

4 lettuce leaves

2 T fresh mint

2 T chopped shallots

Juice of 2 oranges

Juice of ½ lime

2 T olive oil

1 T raw cashew

Salt to taste

For the quinoa:

3 C of water

Salt to taste

1.5 C quinoa grains, rinsed and drained

Directions:

Cooking quinoa:

Bring 3 cups of water to a boil. Salt to taste. Add quinoa.

Allow to return to a boil before reducing heat to a simmer and covering the pot. Cook until all the liquid is absorbed, about 15 minutes.

Keep covered and allow to stand about 5 minutes. Fluff grains with a fork.

Dressing

Blend the orange juice, lime juice, olive oil, cashews, and shallots until smooth. Salt to taste.

Combine cooked quinoa, dressing and mint in a mixing bowl and toss. Season to taste.

Lay lettuce leaf on each serving plate. Serve a scoop of dressed quinoa salad on each leaf with an ample serving of the citrus fruit.
