Quinoa Waffles

Ingredients

1 Tbsp chopped dates

1 Cup water

1 Cup quinoa

½ Cup raw cashews or sunflower seeds

¼ tsp sea salt

1 tsp vanilla

1 Cup water (additional)

Seeds

Directions

Soak dates for 15 minutes in 1 cup water in blender

Add quinoa and cashews and blend well until creamy.

Add salt, vanilla and additional water and blend until combined.

Spray oil onto hot waffle iron and sprinkle with seeds.

Immediately pour batter onto hot iron and sprinkle with seeds again.

Cook until steam stops - approximately 8-10 min.

Cool on cooling rack.

Serve with nut butter, fresh fruit and yogurt.
