Ingredients

1 C chickpea flour

1 C warm water

1 tsp sea salt

2 Tbsp olive oil

Few sprigs fresh herbs

1/2 onion

Directions:

Whisk together flour, water, salt, olive oil, fresh herbs, onion and salt.

Cover and let sit at room temperature for about 2 hours.

Turn oven broiler/grill to high, and heat cast iron skillet.

Spray skillet with olive oil.

Pour a third of the batter, then tilt pan to distribute.

Broil 3-4 minutes.

Socca is done when browned and crisp.

Repeat with remaining batter.

Cut into wedges or small squares.

Eat plain, use as a wrap for salad or breakfast burrito, use as crust for gluten free pizza. Be creative!
