Tapioca Pudding

Ingredients

1/3 C Cashews

3 C Soymilk

1/4 C Maple Syrup

1/4 C Minute Tapioca

1 1/2 tsp Vanilla

Directions:

Blend cashews in 1 cup soymilk until very smooth.

Pour in saucepan with remaining 2 cups of soymilk.

Add remaining ingredients and bring to a boil.

Turn heat to low and stir until tapioca is thickened.

Set aside to cool off, then layer with fresh or canned fruit into individual dessert dishes.

Chill. Serves 4.
